I support drinking tap water because many cities have high quality water and it is up to us to ensure that we continue to get the best. Raw in 28 Days with Holly Jo - Day 8 - PepperKale Chips

rawin28days May 30, 2010 — Pepper Kale Chips are a delightful chip-like snack especially for those new to raw food as it mimics a familiar cheesy flavor and satisfies any serious crunch craving.


PepperKale Chips
2 cups soaked cashews 
2 red peppers
1 whole juiced lemon
1/2 cup nutritional yeast
2 T Raw Braggs Apple Cider Vinegar
1/2 t chipotle chili pepper flakes or to taste
1 t paprika


2 bunches curly kale (red & green)

Raw in 28 Days with Holly Jo - Day 7 - Green Smoothie

rawin28days May 29, 2010 — Get your morning greens by blending red chard, mango, banana and local tap water. A quick blend in a Vita-Mix Turbo Blend 4500 at low speed starts the day off right.

Red Chard Smoothie

1/2 bunch organic red chard
1 organic mango
1 organic banana
water

Mix in Vita-mix blender ~ Enjoy!

Adding garden greens to a diet may require your stomach to adapt over time. Adding a greater amount of fresh fruit at the beginning will help. A semi-thick blend allows for chewing as this creates enzymes to also help the digestion of greens like chard, kale, dandelion, and spinach.

Day 8 - Raw in 28 Days - Raw Food Journey with Holly Jo

Starting this raw food diet at home is much easier in some ways than going to a retreat where foods are prepared for you. Although the raw food retreat is a wonderful way to have raw foods prepared for you morning, noon, and night by experts, what happens when you get home? I am enjoying the challenge of eating more vegetables and fruit as well as the changes in my health. The last two nights I had night school and I really had to plan to figure out what I would take to eat on the go or to have dinner before class. The reward for my efforts are starting to show in my ability to sleep all night again, my chronic neck ache is disappearing and my clothes fit better! :)

Day 7 - Raw in 28 Days - Raw Cracker Tips - Raw Food Journey with Holly Jo





Today, I finished the raw crackers in the dehydrator and found that I needed to spread the mix a little thinner on the parchment paper. Three trays would be perfect and the crackers would turn out a little more crisp. Here are a couple pictures of the final crackers.

For dinner I made Pure Energy Soup and a Spinach/Arugula Salad.


Here is a picture of all the vegetables that were used in the soup. I included a couple spicy red cayenne peppers in this soup recipe.




Pure Energy Soup
1 Heirloom tomato
1 large, sweet, red bell pepper
1 large, red, purple carrot
2 sprigs parsley
2-3 stalks celery
7 leaves of kale
1 stalk broccoli with florets
1/2 cucumber
1/2 to 1 avocado

Blend in blender until slightly warm. Hint: Add a couple spicy peppers for heat.
